Vegan Sundried Tomato & Herb Bread

INGREDIENTS
300ml warm water
2 tbsp olive oil (from the sundried tomato jar, for extra flavour)
450g strong white bread flour
1 tsp salt
1 tbsp sugar
2 tbsp chopped sundried tomatoes (drained from oil)
2 tsp dried mixed herbs (oregano, basil, thyme)
1 tsp garlic powder 
7g sachet of instant yeast (or 2 tsp)

METHOD

1.    Ensure the water is warm (not hot) to help activate the yeast. Drain and chop the sundried tomatoes into small pieces.


2.    Add the warm water and olive oil to the bread maker pan first. Next, add the flour, ensuring it covers the liquid.


3.     Add the salt, sugar, dried herbs, and garlic powder (if using) on top of the flour, placing them in separate corners.


4.     Make a small well in the centre of the flour and add the instant yeast. Sprinkle the chopped sundried tomatoes on top.

 

5.     Select the basic/white bread setting on your bread maker. Choose the desired crust setting (medium). Set the size to a 1lb or 2lb loaf, depending on your machine's capacity.


6.    Press start and allow the bread maker to do its work. The cycle will take around 3 hours, depending on your machine’s specific settings.


7.    Once the cycle is complete and the bread is baked, carefully remove the bread pan from the machine. Let the bread cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely before slicing.

TIP

Serve with vegan butter and bowl of tomato & basil soup.
