INGREDIENTS
300g Strawberry Jam 
200ml Strawberry Syrup
452g mascarpone cheese
62.5g powdered sugar 
3 tbsp lemon juice
1 tsp pure vanilla extract
420ml heavy whipping cream
112g chopped strawberries 
28 ladyfinger cookies
120g whipping cream
28g freeze dried strawberries

METHOD

1.    Put 300g Strawberry Jam into a bowl.


2.    In a mixing bowl, beat the double cream briefly just until incorporated. Continue to whip for 2-3 minutes or until peaks form. 


3.      For the mascarpone filling, combine 452g mascarpone cheese, 62.5g powdered suagr, 3tbsp lemon juice and 1 tsp pure vanilla extract.


4.     Gently fold the whipped cream mixture into the mascarpone cheese until well combined.

 

5.     Dip each lady finger in the strawberry syrup and place them in a single layer at the bottom of your serving dish.


6.     Top the lady fingers with half of the mascarpone filling.

 

7.  Spread strawberry jam over the mascarpone layer.

 

8.  Sprinkle chopped fresh strawberries on top.

 

9.  Add another layer of dipped lady fingers and repeat the process.

 

10.  Sprinkle the top of the tiramisu with freeze-dried strawberries.

 

11.  Pipe whipped cream around the edges of the dish and garnish the top of the whipped cream with cut-up fresh strawberries.

 

12.  Refrigerate for at least 4 hours or overnight to allow the flavours to meld and the dessert to set.

TIP

Serve individual portions in small glasses or mason jars. This not only adds an elegant touch but also makes serving easy.
