Serves 2-4
INGREDIENTS
500g lean minced turkey
1 tablespoon olive oil
1 large onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 carrot, diced
2 celery stalks, diced
400g canned kidney beans, drained and rinsed
400g canned black beans, drained and rinsed
400g canned chopped tomatoes
250ml beef or vegetable stock
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon chilli powder (adjust to taste)
1/2 teaspoon cayenne pepper (optional, for extra heat)
Salt and black pepper, to taste
Fresh coriander, chopped, for garnish
Grated cheddar cheese, for serving (optional)
Sour cream, for serving (optional)
Sliced green onions, for garnish (optional)
METHOD
1. In a large pot, heat olive oil over medium heat. Add minced turkey and cook until browned. Break it apart with a spoon as it cooks.
2. Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
3. Stir in diced red and yellow bell peppers, carrot, and celery. Cook for 5-7 minutes until the vegetables begin to soften.
4. Add kidney beans, black beans, canned chopped tomatoes, and tomato paste. Mix well.
5. Pour in the beef or vegetable stock, ensuring it covers the ingredients. Stir to combine.
6. Add ground cumin, smoked paprika, chilli powder, cayenne pepper (if using), salt, and black pepper. Adjust the spice level to your preference. Stir the mixture thoroughly.
7. Bring the chilli to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, allowing the flavours to meld and the turkey to cook through.
8. Taste and adjust the seasoning if needed. If you prefer a thicker consistency, simmer uncovered for a few more minutes.
9. Ladle the spicy turkey chilli into bowls. Garnish with fresh coriander and optional toppings like grated cheddar cheese, sour cream, and sliced green onions.
