INGREDIENTS
100-150g ready-made fries
1 teaspoon thyme
1 teaspoon cumin
1 teaspoon marjoram
1 teaspoon garlic salt
15g fresh coriander, chopped
500g chicken mince
1 lemon, juiced
120g tzatziki
75g cherry tomatoes, chopped
75g cucumber, chopped
1 red onion, diced
8 mini tortillas
Salt and pepper
1 teaspoon cooking oil

METHOD

1.    In a large mixing bowl, combine the chicken mince with thyme, cumin, marjoram, and garlic salt. 


2.    Mix thoroughly until the spices are evenly distributed throughout the meat.


3.     Add the chopped fresh coriander to the gyros smash tacos mixture and mix again until everything is well combined.


4.     Lay out the mini tortillas and spoon about 1 tablespoon of the chicken mixture onto each one. 

 

5.     Press down firmly to spread the mixture evenly across the surface of the tortilla.


6.     Heat a large pan over medium-high heat and add 1 teaspoon of cooking oil. 


7.     Cook for about 3 minutes until the chicken is golden and slightly crispy. Lower the heat to medium-low and cook for an additional 2 minutes.  


8.     Flip the tortillas over and cook for another minute to ensure the chicken is fully cooked through.  


9.     Remove the tortillas from the pan and spread a generous layer of tzatziki on top.  


10.     Add a few fries or crispy potato slices, followed by chopped cucumber, cherry tomatoes, and diced red onion. Drizzle with a little more tzatziki and garnish with fresh coriander.  


11.     Serve with tzatziki on the side.  

TIP

Serve with a refreshing Mediterranean rice or quinoa salad flavored with lemon, herbs, and diced cucumbers.
