INGREDIENTS
For the Burgers:
450 g ground beef
Salt and pepper
1 white onion, thinly sliced
1 tomato, sliced
Lettuce leaves
Pickles, sliced
4 slices cheddar cheese
4 brioche buns

For the Sauce:
120 ml mayonnaise
80 ml ketchup
2 tbsp mustard
1 pickle, grated
1 tbsp pickle juice
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/4 tsp salt
1/8 tsp black pepper

METHOD

1.     In a bowl, combine the mayonnaise, ketchup, mustard, grated pickle, pickle juice, paprika, garlic powder, onion powder, salt, and black pepper & mix well until all ingredients are fully combined. Set aside.

2.    Thinly slice the white onion, tomato, and pickles. Wash and dry the lettuce leaves.

3.     Divide the ground beef into 4 equal portions (about 113 g each). Roll each portion into a ball.

4.     Heat a pan over medium-high heat until very hot.

5.     Place the beef balls in the skillet and smash them flat using a sturdy spatula or a burger press. Press down firmly to form thin patties.

6.     Season the patties with salt and pepper.

7.     Cook for about 2-3 minutes until the edges are crispy and the bottom is well-browned.

8.     Flip the patties, add a slice of cheddar cheese on top of each patty, and cook for another 1-2 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

9.     While the patties are cooking, slice the brioche buns in half and toast them on the pan until golden brown.

10.     Spread a generous amount of the burger sauce on the bottom half of each toasted brioche bun.

11.     Place a lettuce leaf, a slice of tomato, and some thinly sliced onions on the bottom bun.

12.     Add the cheeseburger patty on top of the vegetables. Top with pickle slices.

13.     Spread a little more burger sauce on the top half of the bun and place it on top of the burger.

TIP

Serve with a side of sweet potato fries, sprinkle them with sea salt and a touch of smoked paprika for an extra kick.
