INGREDIENTS
3 skinless, boneless chicken breasts
2 tablespoons tomato purée
300ml double cream
½ garlic bulb, cloves peeled and crushed
100g sun-dried tomatoes in oil (drained, oil reserved)
100ml dry white wine
100g Parmesan, grated
1/2 lemon, juiced
Small handful of flat-leaf parsley, chopped
Salt and black pepper to taste
White rice, to serve

 

METHOD

1.    Season the chicken breasts generously with salt and black pepper on both sides.


2.  In a pan, heat 1-2 tablespoons of the reserved sun-dried tomato oil over medium heat. 


3.     Sear the chicken breasts for 2-3 minutes on each side until golden brown.


4.     Place the seared chicken breasts in the slow cooker.

 

5.     In a bowl, mix the tomato purée, garlic, chopped sun-dried tomatoes, white wine, and double cream.


6.     Pour the mixture over the chicken in the slow cooker.


7.     Cover the slow cooker with the lid and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked through.


8.     About 30 minutes before serving, stir in the grated Parmesan and lemon juice. Taste and adjust seasoning with salt and pepper if needed


9.     Let the sauce simmer and thicken slightly while the chicken finishes cooking.


10.     Once the chicken is cooked and the sauce is rich and creamy, sprinkle the chopped parsley over the top.


11.     Serve the Marry Me Chicken with rice.

TIP

Alternatively, serve over creamy mashed potatoes for the perfect winter warmer.
