Serves 4

INGREDIENTS
500g turkey breast, diced
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
200g mushrooms, sliced
2 tablespoons all-purpose flour
500ml chicken or vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)

 

METHOD

1. Set the pressure cooker to sauté mode. Add olive oil and sauté the diced onions and garlic until fragrant, about 2-3 minutes.


2. Add the diced turkey breast to the cooker and cook until lightly browned. Stir in the carrots, celery, and mushrooms. Cook for an additional 3-4 minutes.


3. Sprinkle the flour over the ingredients and stir well to coat. This will help thicken the stew.


4.Pour in the chicken or vegetable broth. Add the bay leaf, dried thyme, salt, and pepper. Stir everything together.


5. Close the lid of the pressure cooker and set it to high pressure. Cook for about 10-12 minutes.

6. Once done, release the pressure naturally or use the quick release method according to your pressure cooker’s instructions. Carefully open the lid. If the stew needs further thickening, you can set the cooker to sauté mode again and reduce the liquid.

7. Serve the festive turkey stew hot, garnished with fresh parsley if desired.
