Popcorn Energy Bites Recipe

Makes 16-20 bites

INGREDIENTS

100g popcorn kernels
100g rolled oats
75g nut butter (peanut, almond, or your choice)
50g honey or maple syrup
50g chopped nuts (e.g., almonds, walnuts)
50g dried fruits (e.g., raisins, cranberries)
1 teaspoon vanilla extract
A pinch of salt

 

 

METHOD

1. Pop the popcorn kernels using an air popper or stovetop popping. Let the popcorn cool.

2. Place the popped popcorn in a food processor and pulse a few times until you have a coarse popcorn powder. Set aside.

3. In a large mixing bowl, combine the crushed popcorn, rolled oats, nut butter, honey (or maple syrup), chopped nuts, dried fruits, vanilla extract, and a pinch of salt.

4. Mix the ingredients thoroughly until well combined. The mixture should have a sticky consistency.

5. Take small portions of the mixture and roll them into bite-sized energy balls using your hands. If the mixture is too sticky, you can dampen your hands slightly with water.

6. Place the energy bites on a tray lined with parchment paper and chill them in the refrigerator for at least 30 minutes to help them set.

7. Once the energy bites are firm, transfer them to a serving plate. Optionally, roll them in additional crushed popcorn for extra texture.

Customize the energy bites by adding ingredients like chia seeds, flaxseeds, or shredded coconut for extra nutritional benefits. For a touch of sweetness, you can mix in dark chocolate chips or chunks.
