Serves 2-4

INGREDIENTS

4 slices of thick-cut white bread
2 large eggs
150ml coconut milk
2 tablespoons caster sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Pinch of salt
Butter, for cooking
Fresh tropical fruits (e.g., pineapple slices, banana), for serving
Maple syrup or honey, for drizzling


 


 

METHOD

1. Cut the thick white bread into slices, ensuring they are approximately 2 cm thick.

 

2. In a mixing bowl, whisk together the eggs, coconut milk, caster sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

 

3. Dip each bread slice into the batter, ensuring both sides are well coated. Allow the bread to soak for a few seconds to absorb the flavours.

 

4. In a frying pan, melt a knob of butter over medium heat. Place the soaked bread slices in the pan and cook until golden brown on both sides. This should take approximately 3-4 minutes per side.

 

5. Arrange the cooked Hawaiian sweet toast on serving plates.

 

6. Garnish the sweet toast with slices of fresh tropical fruits such as pineapple and banana.

 

7. Drizzle maple syrup or honey over the sweet toast and fruits, according to taste.

 

8. Serve immediately while the Hawaiian sweet toast is warm and enjoy this delightful tropical breakfast treat!

To keep the cooked slices warm while preparing the others, place them on a baking sheet in a preheated oven set to a low temperature. This ensures that everyone gets to enjoy warm Hawaiian sweet toast at the same time.
