INGREDIENTS
4 medium potatoes
3 tbsp olive oil
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp dried rosemary
2 tbsp grated Parmesan cheese
Fresh parsley, chopped
Sour cream (for dipping)

 

METHOD

1.    Wash and scrub the potatoes thoroughly. Pat them dry.


2.    Place a potato on a cutting board. Using a sharp knife, make thin slices across the potato, stopping just before you cut all the way through. To make this easier, place chopsticks or wooden spoons on either side of the potato to prevent the knife from cutting all the way through. Repeat with the remaining potatoes.


3.     In a small bowl, combine the olive oil, minced garlic, salt, black pepper, and dried rosemary.


4.     Carefully fan out the slices of each potato and brush the olive oil mixture between the slices and over the top of the potatoes.

5.     Place the potatoes in the air fryer basket, making sure they are not touching each other to allow for even cooking.


6.     Cook the potatoes at 200°C for 25-30 minutes, or until the potatoes are crispy on the edges and tender in the middle. Check for doneness by inserting a fork or skewer into the center of a potato.


7.     Sprinkle parmesan cheese over the potatoes during the last 5 minutes of cooking to allow it to melt and become golden brown.


8.     Remove the potatoes from the air fryer and transfer them to a serving platter.


9.     Garnish with freshly chopped parsley.

TIP

Sprinkle the baked potatoes with your favorite toppings. Classic choices include shredded cheese (like cheddar or Parmesan), crumbled bacon, chopped green onions, and a dollop of sour cream or Greek yogurt.
