INGREDIENTS
50g chorizo
80g light halloumi
150g dry pasta
1 red pepper
1 shallot
1 tbsp oregano
1 tsp garlic paste
40g 50% less fat creme fraiche
30g parmesan
250g passata
Salt & pepper
Parsley
Shredded Cheese - to top

 

METHOD

1.    Boil the pasta in salted water. Cube the chorizo and halloumi. Pan fry for a few minutes then remove from the pan.


2.    Fry diced pepper and shallot in the chorizo oil. 


3.     Season with garlic, oregano, and chilli flakes (optional). Pour in the passata, season with salt and pepper.


4.     Mix in the creme fraiche, cooked pasta, add the chorizo and halloumi back in.

 

5.     Top with shreadded cheese and melt in the oven


6.     Top with fresh herbs & serve

TIP

Serve alongside or mix in some roasted vegetables like courgette, aubergine or mushrooms.
