INGREDIENTS
4 tbsp olive oil
6 smoked bacon rashers, chopped
4 onions, finely chopped
3 carrots, finely chopped
4 celery sticks, finely chopped
8 garlic cloves, crushed2 tbsp dried mixed herbs
2 tbsp dried mixed herbs
2 bay leaves 500g mushrooms sliced
1½ kg lean minced beef (or use half beef, half pork mince
6 x 400g cans chopped tomatoes
6 tbsp tomato purée
Large glass red wine (optional
4 tbsp red wine vinegar
1 tbsp sugar Parmesan

METHOD

STEP 1 > Set the multi cooker to the "sauté" function and heat the oil.

STEP 2 > Add the bacon, onions, carrots, and celery, and cook gently for about 20 minutes until golden.

STEP 3 > Stir in the garlic, herbs, bay leaf, and mushrooms, and cook for an additional 2 minutes - leave to one side.

STEP 4 > In the same multi cooker, add the mince in batches, crumbling just enough to cover the bottom, and cook until browned. Once all the mince is browned, return it to the pot with the vegetables.

STEP 5 > Add the tomatoes and purée, then rinse the cans with red wine or a little water, and pour this into the pot along with the vinegar and sugar.

STEP 6 > Season generously.

STEP 7 > Switch to the "slow cook" function, cover, and simmer for 1 hour until thick and saucy, and the mince is tender.

STEP 8 > Serve with pasta and a sprinkle of parmesan.

TIP

Spoon over a baked potato and top with cheese for a hearty alternative.
