INGREDIENTS
4 pancetta rashers (or bacon)
4 simply chicken chiploatas (or sausages)
2 mini wraps
1 medium eggs
1 tsp light butter
Sprinkle of herbs
Sprinkle of garlic
Cherry tomatoes
Mushrooms - chop these small
Salt & pepper
Chilli flakes
Fresh chives

METHOD

1.    Air fry the pancetta for 6 minutes at 200 degrees.


2.    Season the sausage with garlic, herbs, salt and pepper.


3.     Mix and roll into 2 balls.


4.     Place onto the wraps and evenly spread out the mixture. Pan fry face down for around 5 minutes or so until the chicken is cooked, flip and fry for a further minute or so.

 

5.     Pan fry the tomatoes and mushrooms, season with salt & pepper.


6.     Whisk the eggs and cook in melted butter until no liquid is visible & season.


7.     Load up the tacos, top with chilli flakes and lots of fresh chives.

TIP

Serve with a ramekin of baked beans, your favourite choice of sauce and a handful of crispy hash browns.
