INGREDIENTS
1/2 diced white onion
700g extra lean beef mince
4 diced garlic cloves
1 tsp chilli powder
1/2 tsp ground cumin
2 tsp Ground ginger
2 tsp red pepper flakes
1 tsp salt & pepper
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1.5 tsp oregano
50g tomato paste
100g softened light cream cheese
80g grated cheese (a mix of cheddar & mozzarella)
120g cheese sauce (Doritos Nacho Cheese Sauce)
6 tortilla wraps

METHOD

1.    Heat a large pan over medium heat. Spray with a little cooking oil if needed.


2.    Add the diced onion and cook for 2 - 3 minutes until softened.


3.     Stir in the garlic and cook for another minute.


4.     Add the beef mince, breaking it apart with a spatula. Cook until browned (5 - 7 minutes).

5.     Sprinkle in the seasoning mix and stir well.


6.     Add the tomato paste and mix through, cooking for 1 - 2 minutes.


7.     Reduce the heat to low and stir in the softened cream cheese, ensuring it melts into the beef.


8.     Mix in the grated cheese until combined and creamy.


9.     Lay out a tortilla and spoon a portion of the creamy beef filling into the centre.


10.     If using, drizzle with cheese sauce or extra shredded cheese.


11.     Sprinkle with fresh coriander.


12.     Fold in the sides, then roll up tightly into a burrito.


13.     Heat a dry pan over medium heat. Place each burrito seam-side down and toast for 1 - 2 minutes per side, until golden and crispy.

TIP

Add black beans, sweet corn, or sautéed bell peppers for extra texture.
