Serves 2-4
INGREDIENTS
3 ripe bananas (about 300g)
150g unsalted butter, melted
200g granulated sugar
2 large eggs
5ml vanilla extract
250g all-purpose flour
5g baking soda
2g salt
100g walnuts or pecans, chopped (optional)
METHOD
1. Preheat your oven to 180°C (160°C for fan ovens). Grease and flour a standard-sized loaf pan.
2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
3. Add the melted butter, granulated sugar, eggs, and vanilla extract to the mashed bananas. Mix well until the ingredients are thoroughly combined.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. If using, fold in the chopped nuts.
6. Pour the batter into the prepared loaf pan, spreading it evenly.
7. Bake in the preheated oven for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Baking times may vary, so start checking around 45 minutes.
8. Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
9. Slice and serve the banana bread. Enjoy it warm or at room temperature.
HANDY TIP
If you have overripe bananas but are not ready to make banana bread, peel and freeze them. Thawed bananas can be used in this recipe, and freezing gives them a sweeter flavor and a softer texture when mashed.
You can customize your banana bread by adding chocolate chips, dried fruit, or a swirl of nut butter to the batter before baking. Serve slices of banana bread with a dollop of whipped cream or a scoop of vanilla ice cream for a delightful treat.
