INGREDIENTS
650g boneless chicken
450g cooked Chicken breast

Maggi Peri Peri Seasoning Mix 
60ml oil
60ml lemon juice
60ml Peri Peri sauce
1 tbsp tomato paste

METHOD

1.    In a large mixing bowl, combine the Maggi Peri Peri Seasoning mix, oil, lemon juice, Peri Peri sauce, and tomato paste. Stir until the mixture is well combined.


2.    Add the boneless chicken to the bowl with the marinade. Ensure each piece of chicken is thoroughly coated with the marinade.


3.     Cover the bowl with cling film or a lid and refrigerate for at least 1 hour, preferably overnight for more intense flavour.


4.     Preheat your air fryer to 180°C (350°F) for about 5 minutes.

 

5.     Remove the chicken from the marinade, allowing any excess marinade to drip off.


6.     Use a Air Fryer Liner in the basket to prevent sticking and place the chicken pieces in a single layer in the air fryer basket. You may need to cook in batches depending on the size of your air fryer.

 

7.    Cook the chicken at 180°C (350°F) for 12-15 minutes, turning halfway through the cooking time, until the chicken is cooked through and has a nice golden colour.

 

8.   Serve on top of salad and with chips for side. 

TIP

Make this recipe vegetarian and even more delicious by replacing the chicken with halloumi and peppers.
