INGREDIENTS
300g diced chicken breast
Salt & pepper to taste
2 tsp paprika
1 large egg, beaten
70g cornflakes
2 cloves of garlic
2 tbsp honey
2 tsp dark soy sauce (light is also fine)
1/2 tbsp sesame seeds
METHOD
1. Season the diced chicken breast with salt, pepper, and paprika.
2. Place the beaten egg in a shallow bowl. Crush the cornflakes in a resealable plastic bag or a food processor until they resemble coarse crumbs.
3. Dip each piece of chicken in the beaten egg, allowing any excess to drip off.
4. Roll the chicken pieces in the crushed cornflakes, pressing gently to ensure the coating sticks.
5. Preheat your air fryer to 200°C (390°F) for 5 minutes and place the coated chicken pieces in the air fryer basket in a single layer, making sure they do not touch. You may need to cook in batches depending on the size of your air fryer.
6. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and the coating is golden and crispy.
7. While the chicken is cooking, heat a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the honey and soy sauce, cooking for another 2-3 minutes until the sauce is well combined and slightly thickened.
8. Once the chicken bites are cooked, transfer them to a large bowl. Pour the honey sesame sauce over the chicken and toss to coat evenly.
TIP
Serve the chicken bites over a bed of steamed white rice with stir-fried brocoli, snap pea and bell peppers.
