Serves 16

INGREDIENTS
250g all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
115g unsalted butter, softened
100g brown sugar
60ml molasses
1 egg
1 teaspoon vanilla extract
Icing and sprinkles for decoration (optional)

 

METHOD

1. Preheat your air fryer to 180°C

2. In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt

3. In another bowl, cream together butter and brown sugar. Add molasses, egg, and vanilla extract, mixing well

4. Gradually add the dry ingredients to the wet ingredients, forming a dough. Wrap in plastic wrap and chill for at least 1 hour.

5.Roll out the chilled dough on a floured surface and cut out shapes using cookie cutters

6. Place the cookies in the air fryer basket, ensuring they are not too close together. Air fry for 8 minutes until golden brown. Let them cool before decorating with icing and sprinkles.


HANDY TIP

For a shiny finish, brush the cookies with a mixture of equal parts honey and hot water after baking and before decorating.
