INGREDIENTS
125g unsalted butter
100g light brown sugar
75g white granulated sugar
1 medium egg
1 tsp vanilla (optional)
300g plain flour
1 tbsp cornflour
½ tsp bicarbonate of soda
½ tsp sea salt
300g chocolate chips (150g dark, 150g milk)
METHOD
1. In a bowl, add together the butter and sugars until the mixture is smooth and creamy.
2. Beat in the egg and vanilla extract until well combined.
3. Add the plain flour, cornflour, bicarbonate of soda, and salt to the bowl. Beat until a cookie dough forms.
4. Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
5. Using a 5cm scoop, portion the cookie dough onto a tray. Each portion should weigh approximately 50-60g.
6. In the air fryer, arrange as many cookies as will fit comfortably; typically, three at a time.
7. Bake the cookies in the air fryer at 160ºC for 10 minutes.
8. After baking, let the cookies cool for a few minutes, as they will be very soft.
9. Repeat the process for the remaining cookie dough, baking as many cookies as desired.

Consider incorporating chopped nuts for added crunch or mini marshmallows for a delightful, gooey texture.
