INGREDIENTS
For the Calzone filling:
2 chicken breasts, cooked and shredded
Salt and pepper to taste
2 tsp smoked paprika
15g pepperoni, sliced
100g passata
60g reduced-fat mozzarella, shredded
For the dough:
100g self-raising flour
150g Greek 0% yogurt
Pinch of salt

 

METHOD

1.    In a bowl, combine the shredded chicken, smoked paprika, sliced pepperoni, passata, and shredded mozzarella. 


2.    Mix well and season with salt and pepper to taste. Set aside.


3.     In a separate bowl, combine the self-raising flour and a pinch of salt.


4.     Add the Greek yogurt to the flour and mix until it forms a dough. If the dough is too sticky, you can add a little more flour.

 

5.     Knead the dough gently on a floured surface for about 1-2 minutes until smooth.


6.     Divide the dough into two equal portions. Roll out each portion into a circle, about 5-6 inches in diameter.


7.     Place half of the filling on one side of each circle, leaving a little space around the edges.


8.     Fold the other half of the dough over the filling to create a half-moon shape.


9.     Press the edges together to seal, and use a fork to crimp the edges for extra security.


10.     Preheat your air fryer to 180°C for about 3-5 minutes.


11.     Lightly spray the calzones with olive oil spray to help them crisp up.


12.     Place the calzones in the air fryer basket, ensuring they are not overcrowded.


13.     Air fry at 180°C for 12-15 minutes, or until golden brown and cooked through.


14.     Once cooked, remove the calzones from the air fryer and let them cool for a few minutes.


15.     Serve warm with additional passata or your choice of dipping sauce.

TIP

Make veggie calzones by replacing the chicken & pepperoni with a layer of pesto, roasted cherry tomatoes, mozzarella, and fresh spinach leaves.
