INGREDIENTS
Maggi Air Fryer Fajita Seasoning
650g boneless skinless chicken breast, sliced
1 large onion, sliced
Red, green, and yellow bell peppers, sliced
1 tbsp cooking oil
Fresh lime wedges
Handful of fresh coriander

For Serving:
Cooked rice
Black beans
Avocado slices
Salsa
Sour cream
Shredded cheese
Lime wedges

 

METHOD

1.    Add the chicken strips, bell peppers, and red onion to the bowl. Toss everything together until the chicken and vegetables are well-coated with the Maggi Air Fryer Fajita Seasoning.


2.    Preheat your air fryer to 200°C  for a few minutes.


3.     Place the marinated chicken and vegetables in the air fryer basket in a single layer. 


4.     Cook for 15-18 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender and slightly charred.

 

5.     Once the chicken and vegetables are cooked, remove them from the air fryer and squeeze fresh lime juice over the top.


6.     In serving bowls, layer the cooked rice, black beans, and the chicken and vegetable mixture.


7.     Top with avocado slices, salsa, sour cream, shredded cheese, and chopped fresh coriander.


8.     Serve the chicken fajita bowls with lime wedges on the side for extra zest.

TIP

For an extra touch, serve with warm tortillas on the side.
