INGREDIENTS
1 pound ground chicken
2 tbsp Taco Seasoning
8 tortillas corn or flour
1 can enchilada sauce red
113g mexican cheese shredded
120g sour cream
METHOD
1. Add the ground chicken to a skillet and cook over medium heat until fully cooked. Stir in the Taco seasoning.
2. Top each tortilla with seasoned chicken.
3. Continue building the enchiladas with the remaining tortillas.
4. Add a small sheet of foil that covers the bottom of the air fryer.
5. Roll each of the enchiladas and place them into the air fryer on top of the foil.
6. Once you have finished adding the enchiladas, top the enchiladas with the enchilada sauce.
7. Sprinkle the cheese evenly over the top.
8. Air fry the enchiladas at 180 degrees for 5 minutes. Carefully remove the enchiladas from the air fryer.
9. Top with any remaining cheese and sour cream to serve.
TIP
Make this recipe vegetarian by mixing black beans with diced onions, peppers and courgette.
