INGREDIENTS
500g baby potatoes
2 tbsp olive oil
Salt and black pepper, to taste
4–5 slices of bacon, cooked and crumbled
100g brie cheese, cut into small cubes
3 tbsp cranberry sauce
Fresh thyme or parsley, for garnish
METHOD
1. Wash the baby potatoes and place them in a microwave-safe bowl with a little water. Microwave on high for 5–7 minutes until the potatoes are tender but not falling apart. Drain and pat them dry.
2. Once the potatoes are cool enough to handle, place them on a cutting board. Gently smash each potato with a potato masher or the back of a fork, just until they’re flattened but still hold together.
3. Drizzle the smashed potatoes with olive oil and season with salt and black pepper. Place them in a single layer in the air fryer basket.
4. Air fry at 200°C for 12–15 minutes, or until they’re golden and crispy around the edges.
5. Carefully top each potato with a small cube of brie, a sprinkle of crumbled bacon, and a dollop of cranberry sauce.
6. Return the potatoes to the air fryer and cook for another 3–4 minutes at 180°C, just until the brie melts and becomes gooey.
7. For extra crispiness, drizzle a bit more olive oil on the potatoes before the final air frying.
8. Transfer the potatoes to a serving plate and garnish with fresh thyme or parsley.
TIP
Add a few fresh cranberries or a drizzle of honey for an extra festive touch.
