Makes 8-10 slices

INGREDIENTS

100g softened butter or margarine
160g golden caster sugar
2 medium eggs
225g self-raising Flour
1 tsp baking powder
1 large banana, mashed
75g chopped pecan nuts

METHOD

  1. Grease a 900g (2lb) loaf tin and line with parchment paper. Preheat the air fryer at 160C.
     
  2. Place all of the ingredients apart from the nuts into a bowl and whisk with a hand mixer for about 30 seconds until combined.
     
  3. Add ¾ of pecan nuts and stir gently to combine. Place the mixture into the loaf tin and level the mixture out with a spatula then sprinkle over the remaining nuts.
     
  4. Place the tin on the bottom shelf of the air fryer for 45 minutes until well risen and browned on top. To check that the loaf is cooked, insert a skewer into the centre of the cake; it should come out clean if cooked.


    TIP
    Walnuts and hazelnuts also work really well in this recipe or try replacing the nuts with chocolate chips.
